When he is eating his pasta his is able to direct half the food to the primary stomach, where it is processed, and the other hatf to the secondary, where it is stored.
The weird burping noises you hear coming from Stu at the start of a race are actually his regurgitating of the food from the secondary to the first stomach, where it will be digested and will provide energy for the second half of the race. This way, Stu is able to store enough carbs for around three hours of racing, as opposed to only half of that for us mere mortals.
Now if only he could sort out his cramping problems ...
