The Lake District could be a good bet for a biking/bivvying epic. Lots of the high passes are classified as bridleways so they're completely legal to ride (or push/carry) a bike on. Also some of the fells such as High Street, Helvellyn and Skiddaw have bridleways going over them. Quite easy to invent a big loop linking them up, and you can bivvy pretty much anywhere once you're on open ground.

Programme on Travel Channel (Sky 251) called Wild Camping tonight at 8pm. A woman wild camping across Europe by motorbike, might be of interest or pick up some tips.
