As you know I'm one third Indian and one third Chinese so I know that it depends on the tea.

Teas that have little or no oxidation period, such as a green or white tea, are best brewed at lower temperatures between 60 °C and 85 °C (140-185 °F), water for teas with longer oxidation periods (like our everyday black teas) should be added at boiling point (100 °C or 212 °F) as many of the active substances do not develop at temperatures lower than 90 °C.

The higher temperatures are required to extract the large, complex, flavorful phenolic molecules so putting milk in first reduces the temperature thus reducing the release of flavor.

Always milk in afterwards, the colour of the tea as the milk is put in determines how much milk is added. How a bout a how strong do you like your tea thread ?
As for putting milk in first I did read/see that it was done because in the early days of tea drinking the tea cups were made of china that could break when v.hot tea was added, by adding milk first that took some of the heat off when the tea was added. If only could remember where this came from, an old wife perhaps ?

Impossible ... it doesn't take a maths genius to work that one out, unless the remaining third is alien. If you are talking about your molecular make up then you might be saying a third of your diet is Chinese and a third is Indian.

So what is the remaining third? KFC? :lol: :lol:

Three of Huw's great-grandparents are Indian, three are Chinese (one Indian married one Chinese, met during the Sino-Indian war), so he used the 1/3 ratios as a simplification (as well as to increase his Welshness ratio from 2/8 to 1/3 ...).
