Best places to cycle in the U.S

What are people's favourite rides - or ideas of rides - in the States?

I'm looking for those places that you can only get to - and get a kick out of - on two non-motorised wheels.

On or off-road.

Off road or on - paradise either way

Have only ridden off-road but I'm sure road stuff would be good

Also California (around San Francisco) is good.
