Is there anything stopping us? how about:

a one legged bike race where the pedal is removed from one crank?

Or on a closed circuit a Triathlon with a difference - eat some chips (curry), drink a few shots/beers, then (try) ride, potentially a few cones to loop around?

But they did have races like that at the Beastway end of season team relay fun event...

I remember one race where time bonuses were awarded for number of blackberries collected in a basket attached to the handlebars and another where zip ties were ingeniously used to restrict all riders to bottom gear (which on a MTB means you have to spin about 200rpm to break 10mph) Fancy dress was encouraged. Oh and there would sometimes be people disguised as shrubs am'bush'ing you....
